Equipment

Ingredients
  

For the crust

  • 2 ¼ teaspoons 1 packet active dry yeast
  • 1 ½ teaspoons sugar
  • ¾ cup warm water about 110°F
  • 2 cups all-purpose flour
  • ½ cup cornmeal
  • ¾ teaspoon salt
  • ¼ cup olive oil plus more for greasing

For the sauce

  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 can 15 oz crushed tomatoes
  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • Salt and pepper to taste

For the toppings

  • 1 cup shredded mozzarella
  • ½ cup shredded provolone
  • ¼ cup grated Parmesan
  • ½ red onion thinly sliced
  • 1 small zucchini chopped
  • ½ red bell pepper chopped
  • ½ green bell pepper chopped
  • 1 cup baby spinach
  • ½ cup sliced mushrooms
  • Optional: black olives artichoke hearts, or jalapeños for extra vegetarian pizza toppings

Instructions
 

Prepare the dough

  1. In a bowl, dissolve yeast and sugar in warm water. Let sit for 5–10 minutes until frothy. Add flour, cornmeal, salt, and olive oil. Mix until a soft dough forms. Knead for 5–7 minutes until smooth. Place in a greased bowl, cover, and let rise for about 45 minutes or until doubled in size.

Make the sauce

  1. While the dough rises, heat olive oil in a saucepan. Sauté garlic for 30 seconds. Add crushed tomatoes, oregano, basil, salt, and pepper. Simmer on low for 10–15 minutes. Set aside to cool.

Preheat oven to 425°F

  1. Grease your pan with olive oil or non-stick spray.

Shape the dough

  1. Roll out the dough into a circle about 12 inches in diameter. Press it into the pan, pushing it up the sides to form a deep crust. Let it rest for 5–10 minutes to prevent shrinking.

Layer the pizza

  1. Start with half of the shredded mozzarella and provolone directly on the crust. Follow with a mix of sautéed veggies (or raw, depending on your texture preference). Spoon the tomato sauce over the top. Add the rest of the cheese and a sprinkle of Parmesan.

Bake it

  1. Place the pizza in the oven and bake for 30–35 minutes, until the crust is golden and the cheese is bubbly and browned in spots. Let cool for 10 minutes before slicing.
