Ingredients
  

For the cherry filling

  • 4 cups fresh cherries pitted and halved
  • ¾ cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract optional but recommended
  • 1 tablespoon lemon juice
  • ¼ teaspoon salt

For the biscuit topping

  • 1 cup all-purpose flour
  • ¼ cup granulated sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter chilled and cubed

  • ½ teaspoon vanilla extract

Preheat & Prep

  1. Preheat your oven to 375°F (190°C). Grease a 9-inch baking dish and set it aside.

Make the Cherry Filling

  1. In a mixing bowl, toss the fresh cherries with sugar, cornstarch, vanilla extract, almond extract (if using), lemon juice, and salt. Stir well to coat the cherries evenly. Pour the mixture into the prepared baking dish and spread it out evenly.

Prepare the Biscuit Topping

  1. In another bowl, whisk together the flour, sugar, baking powder, and salt. Cut in the chilled butter using a pastry cutter or fork until the mixture resembles coarse crumbs. Stir in the milk and vanilla extract just until the dough comes together—do not overmix.

Assemble & Bake

  1. Drop spoonful of the biscuit dough over the cherry filling, leaving some gaps for steam to escape. Bake for 40 minutes or until the topping is golden brown and the cherries are bubbling.

Serve & Enjoy

  1. Let the cobbler cool slightly before serving. Pair it with vanilla ice cream or fresh whipped cream for the ultimate indulgence.
