Instructions
Prepare the Sauce
In a bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, garlic, ginger, and red pepper flakes.
Arrange the Chicken
Place the crockpot chicken breast directly into your crockpot. Pour the teriyaki sauce mixture over the chicken, making sure the pieces are well-coated.
Crock Pot Cooking
Cover the crockpot and set it to cook on LOW for 4 hours. If you're starting with frozen chicken breast crockpot style, you can cook it for about 5 hours.
Thicken the Sauce
About 15 minutes before serving, whisk together the cornstarch and water. Pour this slurry into the crockpot and stir to combine. Cover again and let it cook until the sauce thickens.
Prep the Veggies and Rice
While the sauce thickens, steam the broccoli and edamame, slice the peppers, and prepare the rice according to package instructions.
Assemble Your Bowls
Start with a generous scoop of rice at the bottom of each bowl. Top with shredded chicken (shred it right in the crockpot for maximum juiciness), then add the vibrant veggies. Drizzle with extra sauce, sprinkle with sesame seeds, and top with sliced green onions.
