Equipment

  • Crockpot or slow cooker Vital for that low and slow magic. If you don't have one, you could also use an Instant Pot on the slow cook setting.
  • Mixing bowls For whipping up the teriyaki sauce.
  • Whisk To ensure your sauce is smooth and luscious.
  • Measuring cups and spoons For accuracy and balance in flavors.
  • Small saucepan (optional) If you want to thicken the sauce separately.

Ingredients
  

For the Chicken

  • 2 pounds crockpot chicken breast fresh or frozen
  • 1 cup low-sodium soy sauce
  • 1/3 cup honey
  • 1/4 cup rice vinegar
  • 1 tablespoon sesame oil
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger minced
  • 1/2 teaspoon crushed red pepper flakes optional
  • 2 tablespoons cornstarch
  • 2 tablespoons water

For the Bowls

  • 2 cups cooked jasmine or basmati rice
  • 1 cup broccoli florets
  • 1 cup shredded carrots
  • 1 red bell pepper sliced thin
  • 1/2 cup edamame shelled
  • 2 tablespoons sesame seeds
  • 2 green onions sliced thin

Instructions
 

Prepare the Sauce

  1. In a bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, garlic, ginger, and red pepper flakes.

Arrange the Chicken

  1. Place the crockpot chicken breast directly into your crockpot. Pour the teriyaki sauce mixture over the chicken, making sure the pieces are well-coated.

Crock Pot Cooking

  1. Cover the crockpot and set it to cook on LOW for 4 hours. If you're starting with frozen chicken breast crockpot style, you can cook it for about 5 hours.

Thicken the Sauce

  1. About 15 minutes before serving, whisk together the cornstarch and water. Pour this slurry into the crockpot and stir to combine. Cover again and let it cook until the sauce thickens.

Prep the Veggies and Rice

  1. While the sauce thickens, steam the broccoli and edamame, slice the peppers, and prepare the rice according to package instructions.

Assemble Your Bowls

  1. Start with a generous scoop of rice at the bottom of each bowl. Top with shredded chicken (shred it right in the crockpot for maximum juiciness), then add the vibrant veggies. Drizzle with extra sauce, sprinkle with sesame seeds, and top with sliced green onions.
