Ingredients
  

  • 1 cup mashed sweet potatoes roasted or boiled, cooled and mashed until smooth
  • 2 large eggs plus 1 additional egg per serving for topping
  • cups all-purpose flour
  • For a gluten free waffles easy option substitute with oat or almond flour or a 1:1 gluten-free baking blend.
  • 1 tbsp baking powder
  • ½ tsp baking soda
  • 1 tbsp brown sugar optional, depending on sweetness preference
  • 1 tsp ground cinnamon
  • ¼ tsp nutmeg
  • cups milk whole milk is great, but dairy-free alternatives like oat or almond milk work just as well
  • 3 tbsp melted butter or coconut oil
  • 1 tsp vanilla extract
  • Pinch of salt
  • Cooking spray or oil for greasing waffle maker

Instructions
 

Prepare the sweet potato

  1. Start by either roasting (at 400°F for about 45 minutes) or boiling your sweet potato until soft. Once cooled, mash it until creamy with no lumps.

Mix the dry ingredients

  1. In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg. These spices bring warmth and elevate the natural sweetness of the sweet potato.

Whisk the wet ingredients

  1. In a separate bowl, mix the mashed sweet potatoes, eggs, milk, melted butter or oil, vanilla extract, and sugar if using. Blend until smooth and well combined.

Combine the wet and dry

  1. Slowly stir the dry ingredients into the wet, folding just until mixed. Overmixing can result in dense waffles, so aim for a batter with a few lumps remaining.

Preheat and grease the waffle maker

  1. Get your waffle iron hot and lightly grease with oil or cooking spray to prevent sticking.

Cook the waffles

  1. Scoop batter into the center of the waffle iron and cook for about 4–5 minutes or until golden brown and crisp. The result should be waffles with crisp edges and a tender interior.

Fry the eggs

  1. While the waffles are cooking, heat a skillet with a touch of oil or butter. Crack in the eggs and fry to your preference—sunny side up keeps the yolk runny and luxurious.

Assemble and enjoy

  1. Place each waffle on a plate, top with a freshly fried egg, and finish with a dusting of cinnamon. If you’re feeling fancy, add a drizzle of maple syrup, avocado slices, or even hot sauce for contrast.
