Stromboli with Eggs and Bacon

Equipment

  • Mixing bowls (1 large, 1 medium)

  • Cooking thermometer (optional)
  • No cast iron? Use a non-stick or ovenproof pan.
  • No rolling pin? A wine bottle works in a pinch.
  • No thermometer? Use the fingertip test for warm milk.

Ingredients
  

Dough (makes one 12” stromboli)

  • 2 ½ cups all-purpose flour plus extra for dusting
  • 1 tsp sugar
  • 1 tsp salt
  • 1 tsp instant yeast
  • 1 cup warm milk 110°F / 43°C
  • 1 tbsp olive oil plus more for brushing

These ingredients reflect a stromboli dough recipe base. You can also use a homemade stromboli dough or even a store-bought easy stromboli with pizza dough.

Filling

  • 6 slices thick-cut bacon
  • 4 large eggs
  • 1 tbsp unsalted butter
  • 1 cup shredded sharp cheddar cheese
  • ½ cup shredded mozzarella
  • 2 scallions thinly sliced
  • 2 tbsp chopped fresh chives or parsley
  • Salt & pepper to taste
  • A pinch of red pepper flakes optional

Instructions
 

Make the Dough

  1. In a large bowl, whisk flour, sugar, salt, and yeast.
  2. Add warm milk and olive oil. Mix until a dough forms.
  3. Knead by hand or mixer until smooth and elastic (7–8 minutes).
  4. Place in an oiled bowl, cover, and let rise until doubled (about 1 hour).
  5. You can substitute this with a sourdough stromboli or a homemade stromboli recipe using store-bought dough.

Cook Bacon & Eggs

  1. Cook bacon until crispy. Drain and chop.
  2. Scramble eggs in a bit of bacon fat and butter until just set. Season well.

Assemble Stromboli

  1. Preheat oven to 400°F. Line baking sheet.
  2. Roll dough into a 12x14" rectangle.
  3. Layer eggs, bacon, cheeses, scallions, and herbs in center.
  4. Fold long edges over, then seal ends. Place seam-side down.
  5. Brush with oil, score the top lightly.

Bake

  1. Bake 20–25 minutes until golden brown and crisp.
  2. Cool 5 minutes before slicing.
