- 1/3 cup Kalamata olives pitted and chopped
- 1/4 cup sun-dried tomatoes chopped (oil-packed preferred, drained)
- 1/2 small red onion finely diced
- 2 cloves garlic minced
- 2 tablespoons fresh parsley chopped
- 1 tablespoon lemon juice
- 1 tablespoon olive oil plus more for frying
- 1 teaspoon dried oregano
- 1/2 teaspoon salt or to taste
- 1/4 teaspoon black pepper
