Mediterranean Avocado Toast with Hummus and Olives

Equipment

  • Toaster or grill pan To toast the bread. If you don’t have either, use a skillet on medium heat to crisp it up.
  • Fork For smashing the avocado (you don’t need a fancy tool here).
  • Knife and Cutting Board To prep your toppings
  • Spoon or spatula To spread hummus and avocado evenly.

Ingredients
  

  • 1 ripe avocado – mashed with a fork aka smashed avocado
  • 2 slices of rustic sourdough or multigrain bread – toasted
  • 3 tablespoons hummus – plain or roasted garlic flavor
  • 1/4 cup cherry tomatoes – halved or quartered
  • 6-8 Kalamata olives – pitted and sliced
  • 1 tablespoon red onion – finely diced
  • 1 tablespoon fresh parsley or dill – chopped
  • 1 teaspoon extra virgin olive oil
  • Salt and freshly ground black pepper – to taste
  • Optional toppings – crumbled vegan feta crushed red pepper flakes, lemon zest

Instructions
 

Toast the Bread

  1. Start by toasting your slices of bread until golden and crisp. This adds a solid base and crunch for your toppings.

Spoon and Spread the Hummus

  1. While the bread is still warm, spread a generous layer of hummus over each slice. The warmth brings out the flavor and makes it easier to spread.

Smash the Avocado

  1. In a small bowl, smash your ripe avocado with a fork. Add a pinch of salt and black pepper. If you want that classic Smashed Avocado Toast texture, keep it slightly chunky.

Layer It On

  1. Spoon the smashed avocado over the hummus layer. Don’t worry about it being perfect—rustic is beautiful here.

Add the Toppings

  1. Scatter the sliced olives, cherry tomatoes, red onion, and chopped herbs over the avocado. This is where you can play with different Avocado Toast Toppings—vegan feta, lemon zest, or chili flakes are great add-ons.

Drizzle and Serve

  1. Finish with a light drizzle of olive oil and another pinch of salt and pepper. Serve immediately.
