- ¼ cup gochujang Korean red chili paste
- ⅓ cup low-sodium soy sauce
- 3 tbsp mirin sweet rice wine
- 2 tbsp brown sugar firmly packed
- 2 tbsp honey or maple syrup for sweetness
- 1 tbsp sesame oil toasted, if possible
- 1 tbsp rice vinegar
- 4 cloves garlic finely minced
- 1 tbsp fresh ginger minced
- 1 tsp ground black pepper
- 1 tsp Gochugaru Korean chili flakes or red pepper flakes
Optional: 1 tsp fish sauce (for extra umami punch)
