Instructions
Prepare the mashed potato layer
If you're starting from cold mashed potatoes, heat them gently on the stovetop or in the microwave with milk and butter until creamy. Season with salt and pepper. Spread the mashed potatoes evenly across the bottom of your greased baking dish.
Add the corn
Layer the sweet corn evenly on top of the mashed potatoes. This brings that signature sweetness that balances the savory layers so well.
Top with chicken
Scatter the popcorn chicken (pre-cooked) on top of the corn layer. If using frozen chicken, heat it up in the oven or air fryer to keep it crispy before layering.
Pour on the gravy
Ladle that rich brown gravy all over the chicken layer. Make sure it gets into the nooks and crannies – this is where the casserole gets its deep, comforting flavor. Reserve a few tablespoons if you like to drizzle extra on top before serving.
Sprinkle with cheese
Generously cover everything with shredded cheddar (and mozzarella, if using). The cheese acts like a melty blanket that holds everything together once baked.
Bake it up
Pop the dish into a preheated oven at 400°F for 20–25 minutes or until the cheese is melted and bubbly, and the whole dish is heated through.
Serve and enjoy
Scoop onto plates or into bowls for the ultimate cozy homemade kfc famous bowl experience. Feel free to drizzle with extra gravy if desired!
