Instructions
Step 1: Make the Keto Pie Crust
In a mixing bowl, combine almond flour, coconut flour, and sweetener.
Cut in the cold butter using a pastry cutter or food processor until the mixture resembles coarse crumbs.
Add the egg and vanilla extract, mixing until a dough forms.
Wrap the dough in plastic wrap and refrigerate for 20 minutes.
Step 2: Prepare the Apple Filling
Melt butter in a saucepan over medium heat.
Add apple slices, sweetener, lemon juice, cinnamon, and nutmeg. Stir well and cook for 10-15 minutes until apples soften.
Sprinkle in xanthan gum to help thicken the mixture. Remove from heat and add vanilla extract.
Step 3: Assemble & Bake the Pie
Preheat oven to 350°F (175°C).
Roll out the chilled dough between two sheets of parchment paper and fit it into a greased pie dish.
Pour the filling into the crust and spread evenly.
(Optional) Roll out extra dough and cut into strips for a lattice top.
Bake for 35-40 minutes until the crust is golden brown.
Let the pie cool before slicing.
