Ingredients
  

For the Crust

  • 2 cups almond flour
  • ¼ cup coconut flour
  • ½ cup unsalted butter cold and cubed
  • 1 large egg
  • 2 tbsp powdered erythritol or monk fruit sweetener
  • ½ tsp vanilla extract
  • ¼ tsp salt

For the Filling

  • 3 medium apples Granny Smith or Honeycrisp, peeled, cored, and sliced thin
  • 2 tbsp unsalted butter
  • cup granulated erythritol or monk fruit sweetener
  • 1 tbsp lemon juice
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp xanthan gum for thickening
  • ½ tsp vanilla extract

Instructions
 

Step 1: Make the Keto Pie Crust

  1. In a mixing bowl, combine almond flour, coconut flour, and sweetener.
  2. Cut in the cold butter using a pastry cutter or food processor until the mixture resembles coarse crumbs.
  3. Add the egg and vanilla extract, mixing until a dough forms.
  4. Wrap the dough in plastic wrap and refrigerate for 20 minutes.

Step 2: Prepare the Apple Filling

  1. Melt butter in a saucepan over medium heat.
  2. Add apple slices, sweetener, lemon juice, cinnamon, and nutmeg. Stir well and cook for 10-15 minutes until apples soften.
  3. Sprinkle in xanthan gum to help thicken the mixture. Remove from heat and add vanilla extract.

Step 3: Assemble & Bake the Pie

  1. Preheat oven to 350°F (175°C).
  2. Roll out the chilled dough between two sheets of parchment paper and fit it into a greased pie dish.
  3. Pour the filling into the crust and spread evenly.
  4. (Optional) Roll out extra dough and cut into strips for a lattice top.
  5. Bake for 35-40 minutes until the crust is golden brown.
  6. Let the pie cool before slicing.
