Make the Honey Mustard BBQ Sauce
In a small saucepan over medium heat, whisk together the BBQ sauce, Dijon mustard, honey, apple cider vinegar, smoked paprika, garlic powder, and black pepper. Simmer for 5 minutes until slightly thickened. Set aside.
Prep the Sliders
Preheat your oven to 350°F (175°C).
Slice the slider buns in half horizontally (keeping them connected makes assembly easier).
Place the bottom halves in a greased baking dish.
Assemble the Sliders
Mix the shredded chicken (or pulled pork) with the honey mustard BBQ sauce.
Evenly distribute the meat mixture over the bottom buns.
Layer with cheese slices and crispy fried onions.
Place the top buns back on.
Brush and Bake
Mix melted butter with garlic powder and brush over the tops of the buns.
Sprinkle with poppy seeds for a nice touch.
Cover with foil and bake for 10 minutes.
Remove foil and bake for another 5 minutes until golden brown and the cheese is melted.
Serve and Enjoy!
Let the sliders cool for a minute, then slice and serve warm.
