Servings 0.75 cup (good for 3-4 full racks of ribs or 6-8 chicken breasts)

Equipment

  • Mixing bowl Any medium-size bowl will do.
  • Measuring spoons and cups Precision helps keep the flavor consistent.
  • Airtight container or spice jar Mason jars, recycled spice jars, or snap-lid containers work great.
  • Small Whisk or Fork For evenly combining the spices.
  • Funnel (optional) Useful when transferring the blend into a jar without making a mess.

Ingredients

  • 1/4 cup brown sugar – Adds sweetness and helps with caramelization.
  • 2 tablespoons smoked paprika – The star of the blend bringing deep, smoky flavor.
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon kosher salt – Adjust based on your preference or dietary needs.
  • 1 tablespoon freshly ground black pepper
  • 2 teaspoons ground mustard – Adds a subtle tang and bite.
  • 2 teaspoons ground cumin – For earthy complexity.
  • 1 teaspoon cayenne pepper – Optional for heat.
  • 2 teaspoons chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon hickory liquid smoke powder optional, but adds deep smokiness if you can find it

Optional Variations

  • Add crushed red pepper flakes for more kick.
  • For a sweeter profile increase the brown sugar to 1/3 cup.
  • To convert this into a cajun-inspired blend increase the cayenne and oregano, and add a teaspoon of thyme.

Instructions

Measure Out All Ingredients

  1. Begin by measuring each ingredient carefully. For the best results, use level measurements. Gather everything in one spot so the process is quick and mess-free.

Mix in a Bowl

  1. Place all the measured ingredients into a mixing bowl. Use a small whisk or fork to thoroughly combine them. You want a uniform mix, where no one spice dominates visually.

Taste and Adjust (Optional)

  1. Take a tiny pinch of the rub and taste it on your fingertip. If you like it sweeter, saltier, or spicier, now’s the time to adjust.

Transfer to a Container

  1. Once the blend is mixed and you’re happy with the flavor, transfer it into an airtight container using a funnel if needed.

Label and Store

  1. Label your container with the date and name (e.g., “Hickory BBQ Spice Blend – July 2025”) and store it in a cool, dry pantry. It will stay fresh for up to 6 months.
