Ingredients
  

  • 2 cups rolled oats
  • 1/2 cup whole wheat flour
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup honey or maple syrup
  • 1/3 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 cup Greek yogurt plain or vanilla
  • 1 egg
  • 1 cup fresh blueberries

Instructions
 

Preheat the oven

  1. to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper for easy removal.

Mix dry ingredients

  1. In a bowl, combine the rolled oats, whole wheat flour, cinnamon, baking soda, and salt.

Prepare the wet ingredients

  1. In another bowl, whisk together the honey (or maple syrup), melted coconut oil, vanilla extract, Greek yogurt, and egg until smooth.

Combine

  1. Gradually mix the wet ingredients into the dry ingredients, stirring until well incorporated. Fold in the fresh blueberries gently.

Bake

  1. Pour the mixture into the prepared baking dish and spread evenly. Bake for 25 minutes or until the edges are golden brown and a toothpick inserted in the center comes out clean.

Cool & Serve

  1. Let the bars cool in the pan for 10 minutes before transferring them to a wire rack to cool completely. Cut into squares and enjoy!
