Ingredients
2large eggs
2slicesof thick breadsuch as brioche or sourdough
2tbspbutter
1/4cupshredded cheesecheddar, gruyère, or mozzarella work well
1tbspmilk
1/2tspsalt
1/4tspblack pepper
1/4tsppaprikaoptional, for extra flavor
1tbspchopped fresh parsley or chives
Instructions
Prepare the Egg Mixture
In a mixing bowl, whisk together the eggs, milk, salt, black pepper, and paprika. Make sure the mixture is well combined and slightly frothy.
Heat the Pan
Place a non-stick frying pan over medium heat and melt 1 tbsp of butter.
Cook the Omelette Base
Pour the egg mixture into the pan, spreading it evenly. Let it cook undisturbed for about 30 seconds.
Add the Bread
While the eggs are still slightly runny, place the two slices of bread on top, pressing them gently into the egg mixture. Allow them to soak up some of the eggs.
Flip the Omelette
Carefully flip the entire omelette, including the bread, using a spatula. Add the remaining butter to the pan to ensure crispiness.
Add the Cheese
Sprinkle shredded cheese over one side of the omelette while the other side crisps up. Let it cook for another minute until the cheese starts melting.
Fold and Serve
Fold the omelette over the cheese, sandwiching it between the egg and bread. Cook for another 30 seconds, then remove from heat.
Garnish and Enjoy
Sprinkle with fresh parsley or chives, then serve immediately.
