Instructions
Preheat the oven
to 350°F (175°C). Grease your loaf pan or line it with parchment paper.
Mash the bananas
in a large bowl until smooth. Add melted butter and mix well.
Whisk in sugar, eggs, and vanilla extract
until fully combined. If using cinnamon, add it now.
Fold in the self-raising flour
gently, being careful not to overmix. If you’re adding walnuts or chocolate chips, stir them in.
Pour the batter
into the prepared loaf pan and smooth the top.
Bake for 50 minutes
or until a toothpick inserted in the center comes out clean.
Cool in the pan for 10 minutes
then transfer to a wire rack to cool completely before slicing.
