Instructions
Sear the Beef
Heat sesame oil in the Dutch oven over medium-high heat. Add beef chunks and sear on all sides until browned. This locks in flavor!
Build the Sauce
Reduce heat to medium. Add garlic and ginger, sautéing until fragrant (about 1 minute). Stir in soy sauce, brown sugar, rice vinegar, gochujang, red pepper flakes, and beef broth.
Slow Cook to Perfection
Cover the Dutch oven with the lid and reduce heat to low. Let it simmer for about 3 hours, stirring occasionally, until the beef is fork-tender.
Thicken the Sauce (Optional)
If you prefer a thicker sauce, stir in the cornstarch slurry during the last 10 minutes of cooking. Let it simmer until the sauce thickens.
Shred & Serve
Use tongs to shred the beef into the sauce. Garnish with green onions and sesame seeds before serving.
