Crockpot Chipotle BBQ Arm Roast

Ingredients
  

For the Roast

  • 3 lb beef arm roast
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • ½ tsp cumin

For the Chipotle BBQ Sauce

  • 1 cup ketchup
  • 2 tbsp apple cider vinegar
  • 2 tbsp brown sugar
  • 2 tbsp honey
  • 2 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 2 chipotle peppers in adobo sauce minced
  • 1 tsp adobo sauce from the can
  • 1 tsp onion powder
  • ½ tsp garlic powder
  • ½ cup beef broth

Instructions
 

Prep the Roast

  1. Pat the arm roast dry and season all sides with salt, pepper, smoked paprika, garlic powder, and cumin.

Sear for Flavor

  1. Heat olive oil in a large skillet over medium-high heat. Sear the roast for 2-3 minutes per side until browned.

Make the Sauce

  1. In a bowl, whisk together all the BBQ sauce ingredients.

Slow Cook

  1. Place the seared roast in the slow cooker and pour the chipotle BBQ sauce over the top. Cover and cook on low for 8 hours (or high for 4-5 hours).

Shred & Serve

  1. Once done, shred the meat with two forks, letting it soak in the sauce. Serve on buns, over rice, or with roasted vegetables.
