Crockpot BBQ Beef

Ingredients
  

  • 2 lbs beef tips sirloin or chuck roast, cut into bite-sized pieces
  • 1 cup BBQ sauce your favorite brand or homemade
  • ½ cup beef broth
  • ¼ cup brown sugar
  • 2 tbsp Worcestershire sauce
  • 1 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ¾ tsp black pepper
  • 1 tsp salt
  • 1 tbsp cornstarch + 2 tbsp water for thickening, optional

Instructions
 

Prep the beef

  1. Pat the beef tips dry with a paper towel and season with salt, pepper, garlic powder, and onion powder.

Mix the sauce

  1. In a bowl, whisk together BBQ sauce, beef broth, brown sugar, Worcestershire sauce, apple cider vinegar, Dijon mustard, and smoked paprika.

Assemble in the crockpot

  1. Place the beef tips in the slow cooker and pour the sauce mixture over them. Stir to coat evenly.

Slow cook

  1. Cover and cook on low for 6 hours (or high for 3-4 hours) until the beef is tender and easily pulls apart.

Thicken the sauce (optional)

  1. If you want a thicker BBQ sauce, mix cornstarch and water in a small bowl, then stir it into the crockpot during the last 30 minutes of cooking.

Serve & enjoy

  1. Spoon the beef tips over mashed potatoes, rice, or toasted buns and enjoy!
