Creamy Peanut Butter Ramen

  • Medium saucepan
  • Mixing bowl
  • Chopsticks or tongs for tossing

Ingredients
  

  • 1 pack instant ramen discard seasoning packet
  • 2 tbsp peanut butter creamy or crunchy
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • ½ tsp sriracha adjust to taste
  • ½ tsp garlic powder
  • ½ cup broth chicken or vegetable
  • 1 tsp rice vinegar or lime juice
  • 1 tsp honey or brown sugar
  • 1 green onion sliced
  • 1 tbsp crushed peanuts for garnish
  • Optional: soft-boiled egg shredded chicken, or tofu for extra protein

Instructions
 

  1. Cook the ramen noodles according to the package instructions. Drain and set aside.
  2. In a mixing bowl, whisk together the peanut butter, soy sauce, sesame oil, sriracha, garlic powder, broth, vinegar, and honey until smooth.

  3. In the same pot you cooked the noodles, pour in the sauce and heat on low for 1 minute until slightly thickened.

  4. Toss the noodles in the sauce until well coated.
  5. Transfer to a bowl and top with green onions, crushed peanuts, and any optional protein.
  6. Enjoy immediately!
