Instructions
Sauté the aromatics
Heat olive oil in a large pot over medium heat. Add onions and garlic, cooking until softened and fragrant.
Add the veggies
Toss in the carrots and cabbage, stirring for a few minutes to let them slightly soften.
Build the base
Pour in the vegetable broth and diced tomatoes. Stir in thyme, smoked paprika, bay leaf, salt, and black pepper.
Simmer to perfection
Bring the soup to a boil, then reduce the heat and let it simmer for 20 minutes, or until the carrots and cabbage are tender.
