Instructions
Prepare the Filling
In a mixing bowl, combine peanut butter, melted butter, salt, and powdered sugar. Stir until smooth and well combined. If the mixture feels too soft, place it in the refrigerator for about 10 minutes to firm up slightly.
Melt the Chocolate
In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until fully melted and smooth. Alternatively, use a double boiler to gently melt the chocolate over simmering water.
Assemble the Cups
Line a mini muffin tin with paper liners. Spoon about 1 teaspoon of melted chocolate into each liner and use the back of a spoon to spread it slightly up the sides. Place the tray in the freezer for 5 minutes to firm up.
Add the Peanut Butter Layer
Scoop or pipe about 1 teaspoon of the peanut butter mixture onto the set chocolate layer. Gently flatten it with a spoon or your fingers.
Seal with More Chocolate
Spoon another teaspoon of melted chocolate over the peanut butter layer, ensuring it completely covers the filling. Tap the muffin tin gently on the counter to smooth out the tops.
Chill and Enjoy
