Ingredients
  

For the Date Filling

  • 2 cups Medjool dates pitted and chopped
  • 1 cup water
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon optional
  • 1 tablespoon lemon juice

For the Oat Crust and Topping

  • 1 1/2 cups rolled oats
  • 1 1/2 cups all-purpose flour
  • 1 cup brown sugar
  • 3/4 cup unsalted butter melted
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts or pecans optional, for a Date Nut Bars variation

Instructions
 

Step 1: Prepare the Date Filling

  1. In a medium saucepan over medium heat, combine the Medjool dates, water, and brown sugar. Stir frequently and let the mixture simmer until the dates soften and break down, about 5-7 minutes. Mash with a fork or blend for a smoother texture. Stir in the vanilla, cinnamon, and lemon juice. Set aside to cool slightly.

Step 2: Make the Oat Crust and Topping

  1. In a large mixing bowl, combine the rolled oats, flour, brown sugar, baking soda, and salt. Pour in the melted butter and mix until crumbly. If using nuts, fold them in now.

Step 3: Assemble the Squares

  1. Line the baking pan with parchment paper. Press half of the oat mixture firmly into the bottom of the pan to form an even base. Spread the date slice filling over the base, ensuring full coverage. Crumble the remaining oat mixture on top, gently pressing it down.

Step 4: Bake to Perfection

  1. Preheat the oven to 350°F (175°C). Bake for 25 minutes or until the top is golden brown. Remove from the oven and let cool completely before slicing into squares.
