1cupcooked chickenshredded or diced (rotisserie works great!)
1 ½cupsshredded mozzarella cheese
½cupshredded smoked goudaoptional, for extra smokiness
¼cupthinly sliced red onion
2tbspchopped fresh cilantrofor garnish
Instructions
Make the Dough
In a large mixing bowl, combine flour, sugar, yeast, and salt. Gradually add warm water and olive oil, stirring until a shaggy dough forms.
Knead the dough on a floured surface for 8 minutes until smooth. Cover with a damp towel and let rest for 10 minutes.
Prepare the Chicken
Toss the shredded chicken in 2 tablespoons of barbecue sauce to coat evenly. Set aside.
Preheat Oven
Place a pizza stone in the oven and preheat to 475°F (245°C) for at least 15 minutes.
Roll Out Dough
Roll out the dough into a 12-inch circle on parchment paper.
Assemble the Pizza
Spread barbecue sauce over the dough, leaving a small border for the crust.
Sprinkle half of the mozzarella and gouda cheeses. Distribute the chicken and red onions evenly. Top with the remaining cheese.
Bake
Transfer the pizza (with parchment) to the hot pizza stone or baking sheet. Bake for 12-15 minutes, or until the crust is golden and the cheese is bubbly.
Finish with Cilantro
Remove from the oven and sprinkle with fresh cilantro. Slice and serve hot!
