Classic BBQ Beef Nachos

  • Cheese Grater if grating your own cheese

Ingredients
  

  • 1 lb ground beef
  • 1 cup BBQ sauce choose your favorite
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 1 bag tortilla chips
  • 2 cups shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup pickled jalapeños optional
  • 1/4 cup diced red onion optional
  • 1/2 cup chopped tomatoes optional
  • 1/4 cup sour cream optional
  • 1/4 cup chopped fresh cilantro optional
  • 1 avocado diced (optional)

Instructions
 

Preheat the Oven

  1. Set your oven to 375°F (190°C). Line a baking sheet with parchment paper.

Cook the Beef

  1. Heat olive oil in a skillet over medium heat. Add ground beef, breaking it apart with a wooden spoon. Cook until browned, about 5-7 minutes.

Season & Sauce It Up

  1. Drain excess fat from the beef. Stir in smoked paprika, garlic powder, onion powder, salt, and pepper. Pour in the BBQ sauce and mix well. Simmer for 2 minutes, then remove from heat.

Assemble the Nachos

  1. Spread tortilla chips in an even layer on the baking sheet. Sprinkle half the cheese over the chips. Spoon the BBQ beef mixture on top. Add the remaining cheese, and if using - jalapeños, and red onion.

Bake to Perfection

  1. Place the nachos in the oven and bake for 8-10 minutes, or until the cheese is fully melted and bubbly.

Add the Fresh Toppings

  1. Remove the nachos from the oven. Sprinkle chopped tomatoes and cilantro over the top. Drizzle with sour cream and add diced avocado if using.

Serve Immediately

  1. Dig in while it's hot and gooey!
