To 375°F (190°C). Lightly grease a 9x13-inch baking dish.
Cook the beef
In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion is soft. Drain excess grease if needed.
Season and sauce
Stir in the minced garlic, BBQ sauce, ketchup, Worcestershire sauce, smoked paprika, salt, and black pepper. Let the mixture simmer for 3-4 minutes to blend the flavors.
Assemble the casserole
Pour the beef mixture into the prepared baking dish.
Prepare the biscuits
Separate the biscuit dough and arrange each biscuit evenly over the beef mixture.
Bake
Place the dish in the oven and bake for 20 minutes, or until the biscuits are golden brown.
Add the cheese
Sprinkle the cheddar and mozzarella cheese over the biscuits, then return to the oven for 5 more minutes, or until the cheese is melted and bubbly.
Finish and serve
Brush the biscuits with melted butter and sprinkle with fresh parsley (if using). Serve warm and enjoy!
