BBQ Pork Queso Dip

Ingredients
  

  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup whole milk
  • 8 oz cream cheese cubed
  • 1 cup pulled pork use leftover or store-bought
  • ½ cup BBQ sauce your favorite brand
  • 1 can 10 oz Rotel diced tomatoes with green chilies, drained
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 tablespoon butter
  • 1 jalapeño finely diced (optional, for heat)
  • Chopped green onions & cilantro for garnish

Instructions
 

Melt the Butter & Sauté

  1. In a medium saucepan, melt the butter over medium heat. If using jalapeño, sauté it for about a minute until slightly softened.

Build the Cheese Sauce

  1. Add the milk and cream cheese, stirring constantly until the cream cheese is fully melted and smooth.

Add the Cheese

  1. Gradually add the shredded cheddar and Monterey Jack cheese, whisking continuously until melted and creamy.

Incorporate Flavor

  1. Stir in the drained Rotel tomatoes, smoked paprika, garlic powder, and onion powder. Mix well.

Mix in the BBQ Pork

  1. Add the pulled pork and BBQ sauce, stirring until everything is well combined and heated through.

Serve & Garnish

  1. Transfer to a serving bowl and top with chopped green onions and cilantro. Serve warm with tortilla chips or your favorite dippers!
