For the Filling
- 1 ½ pounds ground beef preferably 85/15 for balance between flavor and juiciness
- 1 tablespoon olive oil
- 1 large yellow onion finely diced
- 1 green bell pepper finely diced
- 1 red bell pepper finely diced
- 2 cloves garlic minced
- 2 tablespoons Worcestershire sauce
- 1 tablespoon tomato paste
- ½ cup beef broth low sodium
- 1 tablespoon ketchup
- ½ teaspoon smoked paprika

For the Cheese Sauce
- 1 tablespoon butter
- 1 tablespoon all-purpose flour
- ¾ cup whole milk
- 1 cup shredded provolone cheese or white American for a more authentic philly cheese steak with ground beef flavor
- Pinch of salt
For Assembly
