It seems like lately that I cannot get enough beets. Since my good friend and Ayurvedic Practitioner, Lakshmi, calls my beet craving an “Intelligent Craving”, I will be excited that beets seem to be winning over the glazed donuts. Intelligent, indeed.
Fennel Friday has arrived and when looking at my munching this week, Beet Chips were the fave. I applied gorgeous gold and red beets to my nifty mandolin and out came perfectly sliced little beet chips. Anoint them with EVOO and (this is the good part) Fennel Pollen and/or Citrus Fennel Sea Salt and you have a snack worthy of a swoon. And INTELLIGENT.
Bake them in an oven at 350 degrees for 10-20 minutes but here is the tricky part. Bake them too long and you have blackened beet chips. Take them out too soon and they are chewier than bubble yum bubblegum. Experiment a bit with your oven and see where the sweet spot and time exists. Then make LOTS and LOTS of Beet Chips with Fennel Pollen. I also highly recommend wire racks for cooling because that helps them crisp up!

We Bengalis eat a lot of variety of chips – but I have not tried beet. Looks yumm! Fennel is one of fav spice, and I am so trying these.
