Summer is here and it is hot! My summer has been all about brainstorming recipes for smoothies and salads to take advantage of summer harvests and to stay cool. Many fruits and veggies are also naturally hydrating and are great heat-busters for summer snacks and gatherings.

I chose the Ginger Dressing from Naturally Fresh to use for a Red, White, and Blue Salad for July 4th. The Ranch and Blue Cheese are always in our fridge so I wanted to try something new! I love combining fruits and veggies for salads and they were delicious with the sweet carrots and spicy ginger that make up the delightful tang in the Naturally Fresh Brand Ginger Dressing. In fact, I plan on using the dressing for my fruit snacks all summer!

The great part about this salad is that it can serve a group for your July 4th gathering and they can eat it like a regular salad on the plate or scoop up some of those fresh toppings to dip into the ginger dressing. And the Red, White, and Blue salad looks super festive for your holiday table! I used cherry tomatoes, raspberries, strawberries, white asparagus, daikon radish, vidalia onions, blueberries, black beans, and cucumbers on a bed of chopped romaine lettuce. Feel free to swap your favorite salad toppers at will!

Let’s eat! Are you ready to celebrate July 4th?

Ingredients:

  • Romaine Lettuce
  • ½ pint of cherry tomatoes
  • ½ pint of raspberries
  • ½  pint of strawberries sliced
  • White asparagus stalks – I use a peeler to clean them
  • Julienned daikon radish, about a cup
  • Half of medium Vidalia onion, chopped
  • ½ pint blueberries
  • ½ can of black beans
  • ½ large English cucumber sliced
  • Jar of Naturally Fresh Brand Ginger Dressing

Directions:

Place the chopped romaine on your salad plate. I used a large server. Arrange your fruits and vegetables in sections according to color. Serve cold with Ginger dressing on the side!

Veggie Cups with Naturally Fresh Ranch Dressing

Another great idea for July 4th or any summer gathering is veggie and fruit cups! My kiddo LOVES the ranch dressing from Naturally Fresh and this is how we like to serve it for summer get-togethers! Put the dressing in the bottom and your veggie sticks and fruit chunks on top!
