Savory Lemon Rice with Green Onions Recipe from The Hungry Goddess

Savory lemon rice is soooo easy and soooo tasty! It is especially good with fish dishes – I used it for the Baked Rainbow Trout for Roasted Vegetables. Everyone raved about the rice so I decided to share this simple prep so you can WOW at your next meal.

You can do this preparation for any grain – I am going to use it for quinoa and freekeh too.

Light and tasty – grill or roast some veggies and make that a meal or pair it with some sliced avocados!

Ingredients:

  • 2 cups rice (your choice – even works with instant)
  • Vegetable or chicken broth (replace water called for and use amount called for according to your rice instructions)
  • 1- 2 lemons juiced
  • 6 green onions chopped – white and light green parts
  • Salt and pepper

Directions:

Prepare rice as directed and use vegetable or chicken broth in place of the water called for in the instructions. This makes the rice really savory. I squeeze lemon into rice as it is absorbing liquid and before serving as well. Taste and add salt and pepper to taste. Chop onions and use for garnish. Enjoy!
