Cocoa Chile Mole Purple Cauliflower with Chimichurri Sauce Recipe from The Hungry Goddess

Cauliflower is a “meaty” vegetable and I love to cook it with carnivorous cravings in mind!  I was looking at this gorgeous purple cauliflower that I received from Frieda’s Produce and began to vision roasted purple goodness adorned with bright green chimichurri.  It seriously does not get much better than that!

This makes for a delightful mid-day snack or could even be part of your Meatless Monday dinner.  Sprinkle the Brown Dog Riba Riba Rub onto your cauliflower and roast in the oven.  Brown Dog Riba Riba Rub can be purchased online from Mom’s Gourmet or find it at your local Fresh Market.  (I have also used this rub on a flank steak that came our gorgeous!)  If you don’t see purple cauliflower at your local market, then grab your produce manager and ask for Frieda’s Produce.  I may never return to plain, old white cauliflower!

How do you like your cauliflower?

Ingredients:

  • 1 head of purple cauliflower – chopped and pulled into small pieces
  • 1-2 tablespoons of EVOO (Extra Virgin Olive Oil)
  • approximately 1 tablespoon of Brown Dog Riba Riba Rub
  • Sea Salt
  • Hungry Goddess Chimichurri Sauce Recipe

Directions:

Toss the chopped and pulled cauliflower in the EVOO and then sprinkle with the Brown Dog Riba Riba Rub.  Preheat oven to 380 and spread cauliflower on a baking sheet.  Roast for approximately 30 minutes or until nicely browned.  Serve with chimichurri.  Don’t forget to lick your fingers.
