Wishing everyone a great weekend – delicious food – restful moments – and lots of laughter! Laughter is such an important component of our well-being and spirits. Many people have a long weekend so take some of that extra time to treat yourself. I am planning a weekend interspersed with recipe projects and photo shoots and maybe some just-for-fun photo walks.
Sunday will be a family dinner and my niece’s birthday. No more Easter Egg hunts; all the babies in our family are now officially taller than me I believe, but I will admit that this year feels a bit bittersweet in the inevitable progression of life. Memories of Easter are poignant and wrapped in memories of my Grandmother. Closing my eyes, I can be sitting in her kitchen with the rumble of adult conversations outside in the yard; cheers of delight at the discovery of another neon egg full of coins; the slam of the door as we dashed in to fortify ourselves with a bite of the chocolate bunny; and wafting over it all was the mouthwatering promise of fresh ham from the farm slow-roasting in the oven.

I wanted to do something decadently different with the burrata and the combination of the creamy cheese, sweet fruit and honey paired with crostini was impossible to resist! This is an easy appetizer – just dig in!
Burrata with Blueberries, Strawberries, Honey and Crostini
- Burrata Ball
Rinse the fruit and slice the strawberries. Cut into the burrata and let the creamy goodness seep out. Tear pieces of the burrata and place on the crostini. Sprinkle the fruit liberally and drizzle honey over the plate. BLISS! (I did a garlicky, salty crostini to offset the cream and sweet)
