Three Minute Avocado Hummus from The Hungry Goddess

Do you ever accidentally fall into a bag of potato chips?  Me too.  Especially if I don’t eat breakfast, it might be 2pm before I lift my foggy, ravenous head and fall accidentally into a bag of potato chips.  Or sitting on the couch after a loooong day and it’s like my hand has a mind of its own and is in the bag before I can smack it.  Logically, the answer is to stop buying potato chips but I love salty crunch.  This post takes care of the potato chip accidents AND the grazing urges that I would like to keep healthy (healthier).

ENTER three minute avocado hummus.  I had two Hass avocados that needed using and a can of garbanzo beans sitting on the counter.  Two garlic cloves, juice of one lemon and two minutes in the food processor later, I had a fabulous healthy snack that made my body do a Happy Hungry Goddess dance!  At Whole Foods, I snagged the BOGO Veggie Chips from 365 (NON-GMO Certified too) and I get my salty crunch for 30% less fat and NO GMO’s.  Sorted.

Snacking and eating can be challenging whether working from home or in an office where fast food is a temptation.  How do you keep it healthy?

Ingredients:

  • 2 Hass Avocados – Ripe
  • 1-2 Garlic Cloves – smashed and minced
  • 1 can of garbanzo beans/chickpeas (rinsed)
  • juice of 1 lemon
  • Salt and Pepper to taste

Directions:

Scoop the avocado and add to food processor bowl.  Add other ingredients to food processor bowl.  Pulse until smooth.  Eat the whole bowl.
