In my New Year blog surfing, I was mesmerized by the beautiful simplicity of the Winter Abundance Bowl by Sarah Britton on My New Roots. Raw and elegant and health-FULL and tempting. This is food that I want to eat every single day. I was also inspired by her title – Winter Abundance Bowl and it made me want to create my own.
I thought about it for the past day and a few ideas came to mind but in the end, it was my favorites that uplift me and make my body oh-so-happy: Wild Salmon with a simple Dijon Mustard and Black Mangrove Honey Glaze, Grilled Brussel Sprouts and Black Rice. Sarah included a sumptuous dressing – a Garlic-Ginger Pumpkin Seed Sauce – that I am definitely going to make, but with my simple Abundance Bowl, the glaze from the salmon and the sea salt from the brussel sprouts brought tons of flavor to the rice.
As usual, Sarah and her stunning recipes and paths to healthful eating inspired me. This is definitely Abundance in my world and I cannot wait to make a few more. They will keep me shifting in my eating and my health. Thank you, Sarah B. – you are ABUNDANTLY AWE-SOME!

Dijon Mustard and Honey mixed to glaze the Wild Salmon and then I baked it at 385 degrees until it was done. Toss the brussels lightly in EVOO and add some sea salt and grill/broil under the broiler in the oven for approximately 7-8 minutes. I get the Black Rice at Whole Foods. Easy. Filling. Happy. Abundant. YES!
