There really isn’t an Italian dish that I can recall that I haven’t loved.  I grew up with enormous Italian influences from close family friends, neighbors and living in an area that was heavily Italian-American populated.  Going to the Italian Market in South Philadelphia was a trek that I adored from childhood and the smells and sights are memories that I recall in a flash as an adult.

Italian-influenced food is easy for me because of my love for it and because of growing up around it.  Many recipes are from family and friends or just simply things that I do with no recipe needed.  Fried smelts, chopped antipasto, crusty rolls from the Italian bakery, wine and wine and wine … give me more!  I have phased pasta out a bit in my diet but other things have stepped forward … traditional basil pesto and my newest version of vegan pesto made with basil, fennel fronds and hemp seeds; and risotto – risotto has become therapy for me.  One of my favorite risottos is the Fennel and Leek Risotto with Prosciutto and Fennel Pollen.  Let’s not forget Polenta (just added polenta two ways) and farro and all of the other non-pasta foods that we can celebrate!

What it comes down to is that Italian food is good.  Really good.  No flowery words needed.  I reached out to amazing food bloggers and asked them to share their favorite authentic Italian food and I now present the SMORGASBORD of responses.
