Lemon Tarragon Salmon with Greek Salad and Yogurt Dressing from The Hungry Goddess

Salads are regularly in my rotation for lunch and dinner (sometimes breakfast!).  Especially in summer, salads are a great option to keep kitchens cool and use all the yummy bounty from summer harvests.  I made this for my son, nephews and niece and it was a BIG hit.  They loved the yogurt dressing and salmon.  Lemon and tarragon brighten this entire dish and the yogurt makes for a healthy dressing alternative.

This deliciously awesome (IMHO!) Salmon with Greek salad was part of a fun project with Foods from Chile.  I created a recipe working with ingredients that are in season in Chile which runs on an opposite agricultural season to the USA.  As our foods are going out of season, they will soon be in season in Chile – how perfect is that?  I have full confidence in the produce coming from Chile when I see it in the market (found in places like Whole Foods and Fresh Market as well as regional stores).  After working with Foods from Chile and learning about products from Chile, I know the growing practices and quality are on par with what I want in my dishes.

The Salmon with Greek salad is also a healthy and chilly recipe that is perfect to beat the heat right now!

  • 2 pounds plus of Wild Salmon from Chile (I cook it all together and then cut pieces to serve)
  • 3 tablespoons EVOO – (try Chile Olive Oil found at Whole Foods)
  • 2 tablespoons of fresh chopped tarragon
  • 2 tablespoons of lemon juice
  • Salt and Pepper to taste


Preheat oven to 350 degrees.  Combine EVOO, tarragon, and lemon juice.  Brush mixture over the salmon.  Put the salmon on a foil lined sheet and bake until opaque – approx 30 minutes.  If you are used to working with salmon, you can bake at a higher temp for less time or do the salmon on the grill.  Garnish with fresh tarragon leaves and serve over salad with yogurt dressing.

Lemon Tarragon Salmon by The Hungry Goddess



  • Lettuce – romaine, iceberg, spinach (mix it up!)
  • 3 tomatoes cut into wedges
  • 1 cucumber skin removed and sliced
  • ½ onion cut into rings
  • 1 green bell pepper, without seeds and sliced
  • 7 oz feta cheese, crumbled
  • 1 teaspoon fresh tarragon mixed with lettuce

Yogurt Dressing Ingredients:

  • 1 cup Greek Yogurt
  • 2 tablespoons tarragon chopped
  • lemon zest from 1 lemon
  • Salt and Pepper to taste


Toss the salad ingredients together and give a quick squeeze of half a lemon over the mix.  Toss again.  Prepare salad dressing by combining all ingredients.  Serve salad with portion of salmon on top garnished with tarragon and yogurt dressing.  Salt and Pepper to taste.

    I never see recipes with tarragon except for chicken – this is a much more interesting idea!
