Living in South Florida means that I eat a lot of fish and grilling fish is a year round activity.
Recently, one of my favorite markets had gorgeous Chilean Sea Bass on sale (not always from Chile or Sea Bass but a tasty white fish indeed!). These amazing fillets were mouthwatering and beautiful and they tasted like heaven!
Use a grill pan or a real grill, season generously with some Citrus Fennel Pollen Sea Salt and then adorn it with a scrumptious orange sauce that emphasizes the insane flavor marriage of a substantial whitefish and citrus!
This Orange Sauce had a great consistency which makes it a nice go to for vegetables, fish, chicken, and … (see below) DESSERT!
Chilean Sea Bass with Orange Sauce is part of an ongoing project with Foods from Chile. Chile has amazing produce and is on an opposite agricultural season to the USA. As our foods are going out of season, they will soon be in season in Chile – how perfect is that? I have full confidence in the produce coming from Chile – when I see it in the market, I know the growing practices and quality are on par with what I want in my dishes.
One of my favorite treats from Chile is clementines – they have spoiled me for just about any other clementines and they would be a great swap in for this sauce as well!
Use your favorite fish and veggies and adorn with the Orange Sauce! Happy Eating!
ORANGE SAUCE RECIPE
• 3 tablespoon sugar
• ¼ cup water
• 1 cup orange juice
• 1 teaspoon cornstarch
• 3 tablespoons orange marmalade
Boil the water with sugar until it dissolves. Add the orange juice, marmalade and finally the cornstarch mixed with one tablespoon of water.
