Avocado and Mango Toast on Ezekiel Bread is the best kind of sandwich … OPEN FACED.
It’s like getting two for the price of one with an open-faced sandwich. The second one is just sitting there waiting for you to commence munching.
I am not putting together a whole recipe card for this because it is just too easy.
So easy, that I already can’t wait for tomorrow morning so I can have it for breakfast. Again.
Take your favorite whole grain, sprouted grain, gluten free or plain ole white bread and toast it.
Scoop out all of the delicious insides of half of an avocado. (a small one)
Slice some gorgeous golden mangoes that seem to be in abundance in our markets in South Florida right now.
Squeeze some lemon juice on the avodaco and mush it around. (I like mine a bit mushed)
Salt and Pepper the avocado for taste.
Lay toast on cutting board. Spread mushed avocado. Lay gorgeous mango on it. Give a quick spin on salt and pepper mills.
Commence eating. Don’t forget to admire the amazing colors!
