Cocoa Fudge Candy Bar Cupcakes

Cocoa Fudge Candy Bar Cupcakes from The Hungry Goddess

Chocolate cake could quite possibly be my FAVORITE food in the whole world (and cupcakes count!) – at least in the top 5, along with foie gras.  When I was living in Utah, there was a blessed lady who brought me cupcakes for me and the kiddo.  These were seriously the BEST cupcakes that I have ever had – homemade and absolutely incredible! Pour a glass of milk and experience into Nirvana waves of bliss.

Baking is not my forte … savory is more my thing but I am a Taste Tester Extraordinaire.  Should you like to send me chocolate delights for review, please use the contact form, ahem.  The lovely lady who made the cupcakes and shared this recipe was named Joan and she lives in Provo, Utah – be aware that adjustments may be necessary for those who live at lower altitudes.

Cocoa Fudge Cake

  • 2 cups flour
  • 1 1/2 cups sugar
  • 2/3 cup baking cocoa
  • 1 1/2 teaspoons soda
  • 1 teaspoon salt
  • 1 1/2 cups buttermilk
  • 1/2 cup softened butter
  • 3 eggs
  • 1 teaspoon vanilla

Mix all ingredients thoroughly for 3 minutes on high speed.  Bake in greased/floured 9×13 pan/cupcake pan at 350 for 35-40 minutes (or until wooden pick inserted in center comes out clean).

Chocolate Buttercream Frosting

  • 2 pounds  (1 bag) powdered sugar
  • 1 cube butter, softened
  • 1/2 cup baking cocoa
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • Milk to achieve right consistency

Mix all ingredients, except milk, with electric mixer.  Add  milk A LITTLE at a time until desired thickness is achieved.  Continue beating frosting for 2-3 minutes to make creamy.

Add any crushed candy bars that you desire.  Butterfingers are great mixed into the frosting or sprinkles on top!

Thanks JOAN!
