Lunch with Chef Alex Iverson & Fennel Pollen Crusted Pork Chops

The Hungry Goddess Kitchen had the pleasure of hosting Chef Alex Iverson in prep for a special Fennel and Pork Fennel Friday.

Chef Alex is a talented, young Chef here in South Florida who will be launching a new catering company this Fall – Xavier Catering.  We  shared some of Pollen Ranch’s Fennel Pollen with him and he fell instantly in love and offered to whip something up for Fennel Friday. How could we refuse??

Using the Essential Pantry item of Pollen Ranch Fennel Pollen as a crust is a brilliant way to add subtle but powerful flavor to your dishes – Chef Alex used pork chops and a panko crust with Fennel Pollen.  Fry those chops, caramelize some fennel bulb, saute squash and haricot verts and you have a lunch worthy of a 5 star restaurant!

We paired it with a cold, crispy Riesling and began plotting instantly as to how we can lure Chef Alex back into the kitchen.
